Holiday Ham or Turkey & Potato Soup

Use up the last bits of your holiday dinner by turning the leftovers into a great tasting soup.

Holiday Ham & Potato Soup or Holiday Turkey & Potato Soup

  • 1 cup diced ham or turkey
  • 3 cups chicken broth
  • 1– ½ cup mashed potatoes, with or without gravy
  • ½ cup to 1 cup chopped fresh or cooked vegetables
  • Salt and pepper to taste

Simmer together until heated thoroughly and vegetables are to your preferred level of tenderness.  I personally prefer the ham version, with kidney and navy beans*; or ham with leftover rice. I occasionally dice up some jalapeno or other hot pepper to give it my beloved "kick".

*Dried beans must be soaked - sometimes overnight - before being used in a soup or stew. They are tough! Otherwise, use canned versions.
